About the Experience
Masque Lab is Masque’s research and private dining space, built for experimentation with seasonal Indian ingredients and techniques. The lab explores how produce ages, transforms, and connects across food cultures, moving from root-to-stem and nose-to-tail thinking into a more open, freestyle kitchen format.
Chef Varun Totlani
Chef Varun Totlani is Head Chef at Masque. Born in Mumbai, he trained at the Culinary Academy of India and the Culinary Institute of America before joining Masque’s opening team in 2016. His cooking sits between technique and instinct, with a focus on Indian produce, the grill, and contemporary expressions of regional flavour
